Ingredients
- Sweet potatoes 2 pcs.
- Oil 4 tbsp.
- Salt pinch
- Thyme, fresh 5 g
- Cherry tomatoes mix 300 g
- Spring onions 1 bunch
- Garlic cloves 1 pcs.
- Beef mince 400 g
- Pepper, black ground pinch
- Feta 200 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Peel the sweet potatoes.
- 3. Slice the sweet potatoes into rounds about 1 centimeter thick.
- 4. Arrange the slices in a baking dish, slightly overlapping them.
- 5. Drizzle 2 tablespoons of oil over the potato slices.
- 6. Season the sweet potatoes with salt.
- 7. Bake the sweet potatoes in the oven for about 20 minutes.
- 8. Wash the thyme under running water.
- 9. Shake the thyme dry.
- 10. Strip the thyme leaves from the stems.
- 11. Wash the cherry tomatoes.
- 12. Halve the cherry tomatoes.
- 13. Wash the spring onions.
- 14. Shake the spring onions dry.
- 15. Slice the spring onions into thin rings.
- 16. Peel the garlic.
- 17. Finely chop the garlic.
- 18. Heat 2 tablespoons of oil in a pan over medium heat.
- 19. Fry the minced meat with the thyme for about 5 minutes until crumbly.
- 20. Add the garlic, spring onions, and cherry tomatoes to the pan.
- 21. Continue frying the ingredients for about 2 minutes.
- 22. Season the minced meat mixture with salt and pepper.
- 23. Spread the minced meat mixture evenly over the pre-baked sweet potatoes.
- 24. Crumble the feta cheese over the casserole.
- 25. Bake the casserole for about 15 minutes in the oven.
- 26. Carefully remove the sweet potato casserole from the oven.
- 27. Serve the casserole hot.
