🍲 Sweet Potato Stew for Camping

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- ginger, fresh 10 g
- sweet potatoes 800 g
- oil 2 tbsp
- green lentils 300 g
- tomatoes, chopped 800 g
- vegetable broth 400 ml
- salt pinch
- pepper, black ground pinch
- cumin 1 tsp
- chili, ground 1 tsp
- peanut butter 3 tbsp
Instructions
- 1. Cut the onion in half and peel off the outer skin.
- 2. Dice the onion finely.
- 3. Peel the garlic and the ginger.
- 4. Finely chop the garlic and the ginger.
- 5. Peel the sweet potatoes if you wish.
- 6. Dice the sweet potatoes into small pieces.
- 7. Heat oil in a pot over high heat.
- 8. Sauté the onion, ginger, garlic, and sweet potatoes for about 4 minutes.
- 9. Add the lentils.
- 10. Deglaze the mixture with chopped tomatoes.
- 11. Fill the pot with vegetable broth.
- 12. Season the stew with salt, pepper, cumin, and chili.
- 13. Simmer the stew covered on medium heat for about 15 minutes.
- 14. Stir the peanut butter into the stew.
- 15. Taste the stew and adjust seasoning if needed.
- 16. Serve the stew.
