🍽️ Warm Pull-Apart Bread with Apples and Cinnamon

Ingredients
- yeast, fresh 21 g
- milk 125 g
- sugar 80 g
- butter 80 g
- wheat flour, Type 405 300 g
- salt pinch
- apples, red 300 g
- cinnamon 1 tsp
- oil for greasing 1 tbsp
Instructions
- 1. Crumble the yeast into the mixing bowl.
- 2. Add the milk and 50 grams of sugar.
- 3. Warm the mixture with the measuring cup in place for 3 minutes on level 1 at 37 degrees Celsius.
- 4. Add 50 grams of butter, 250 grams of flour, and a pinch of salt.
- 5. Knead the dough using the dough knead function for 2 minutes.
- 6. Push the dough down from the inner wall of the bowl using a spatula.
- 7. If the dough is too sticky, add up to 50 grams of flour.
- 8. Knead the dough again with the measuring cup in place for 1 minute on level 4.
- 9. Transfer the yeast dough into a bowl.
- 10. Cover the bowl with a kitchen towel.
- 11. Let the dough rise in a warm place for 1 hour.
- 12. Peel the apples and remove the core.
- 13. Cut the apples into eighths and then into thin slices.
- 14. Put cinnamon, the remaining butter, and sugar into the mixing bowl.
- 15. Melt the mixture with the measuring cup in place for 2 minutes on level 2 at 80 degrees Celsius.
- 16. Mix the cinnamon butter mixture with the apple slices.
- 17. Preheat the oven to 175 degrees Celsius with fan (convection).
- 18. Dust the work surface with flour.
- 19. Roll out the yeast dough into a rectangle measuring 40 by 20 centimeters.
- 20. Top the dough rectangle with the apple-cinnamon mixture.
- 21. Fold the long left side towards the center.
- 22. Fold the long right side towards the center as well.
- 23. Split the dough at the center seam into two halves.
- 24. Cut the halves into even squares.
- 25. Grease the loaf pan.
- 26. Place the loaf pan upright.
- 27. Stack the dough squares slightly offset into the pan.
- 28. Place the loaf pan back horizontally.
- 29. Brush the dough squares with the remaining cinnamon-butter mixture.
- 30. Let the pull-apart bread rise again for 30 minutes, covered.
- 31. Bake the bread in the preheated oven for 45 minutes.
- 32. Perform a skewer test with a wooden skewer.
- 33. Extend the baking time if the skewer comes out moist.
- 34. Optionally sprinkle 50 grams of sliced almonds on top before baking.
