🍰 Sweet Waffle Sandwich with Mango and Kiwi

Ingredients
- butter 125 g
- sugar 70 g
- vanilla sugar 1 packet
- salt pinch
- eggs 2 pcs.
- wheat flour, Type 405 250 g
- baking powder 0.5 packet
- milk 200 ml
- mango 1 pcs.
- kiwi 2 pcs.
- mint, fresh 10 g
- apricot jam 4 tbsp
Instructions
- 1. In a bowl, beat the butter with a hand mixer and the whisk until creamy. Gradually add the sugar, vanilla sugar, and salt and mix well.
- 2. Beat the eggs and slowly add them to the bowl while stirring continuously. Stir in the flour, baking powder, and milk until a thick batter forms. If the batter is too thick, add a little more milk.
- 3. Meanwhile, peel the mango, cut the flesh away from the pit, and slice it. Peel the kiwis and slice them as well. Wash the mint, pat it dry, and pluck the leaves.
- 4. Preheat the waffle iron and lightly grease it. For each waffle, place 2 tbsp of batter into the mold and bake the waffles for about 2–3 minutes until golden brown.
- 5. Spread half of the waffles with apricot jam, top with the mango and kiwi slices, and garnish with mint. Cover with another waffle and serve the waffle sandwiches. Enjoy your meal!
