🍰 Sweet vegan maultaschen with apple and carrot filling

Ingredients
- apples, red 3 pcs.
- carrots 2 pcs.
- sugar 115 g
- cinnamon stick 1 pcs.
- cardamom, ground pinch
- nutmeg, ground pinch
- soy sauce 1 tsp
- sugar beet syrup 1 tsp
- oil 3 tbsp
- wheat flour, Type 405 200 g
- salt 0.5 tsp
- water 100 ml
- tofu, plain 100 g
- baby spinach 20 g
- soy yogurt 2 tbsp
- cornstarch 1 tbsp
- vanilla sugar 1 packet
Instructions
- 1. Wash the apples thoroughly.
- 2. Core the apples and cut them into approximately 2-centimeter cubes.
- 3. Wash the carrots.
- 4. Slice the carrots into approximately 2-centimeter thick rounds.
- 5. Place 100 grams of sugar into a tall pot.
- 6. Melt the sugar over medium heat until a light brown caramel forms.
- 7. Add the cut apples and carrots to the caramel.
- 8. Carefully deglaze the mixture with 2 liters of water.
- 9. Stir everything well.
- 10. Add a cinnamon stick, cardamom, nutmeg, soy sauce, beet syrup, and 2 tablespoons of oil.
- 11. Cover the pot.
- 12. Simmer the mixture over low heat for about 30 minutes.
- 13. Place flour, 1 tablespoon of sugar, half a teaspoon of salt, 100 milliliters of water, and 1 tablespoon of oil into a bowl.
- 14. Knead the ingredients into a smooth dough.
- 15. Wrap the dough in plastic wrap.
- 16. Let the dough rest for about 20 minutes.
- 17. Place tofu, spinach, soy yogurt, cornstarch, and vanilla sugar into a separate bowl.
- 18. Mix the filling ingredients thoroughly.
- 19. Sprinkle some flour on a work surface.
- 20. Roll out the pasta dough thinly.
- 21. Cut the dough into approximately 16 rectangles.
- 22. Distribute the filling onto 8 of the rectangles.
- 23. Leave the edges of the rectangles free.
- 24. Place the remaining 8 rectangles on top of the filled halves.
- 25. Seal the edges with a fork.
- 26. Pour the broth through a sieve.
- 27. Remove the solid ingredients from the broth.
- 28. Bring the clear broth to a boil in a pot over medium heat.
- 29. Cook the maultaschen in it for about 6 minutes.
- 30. Remove the maultaschen from the pot as soon as they float to the surface.
- 31. Distribute the maultaschen onto four plates.
- 32. Pour one ladle of hot broth over each serving.
