🍰 Sweet Grape Pizza with Nuts

Ingredients
- water 400 ml
- yeast, fresh 0.5 pc.
- sugar 4 tbsp
- rosemary, fresh 10 g
- wheat flour, type 405 600 g
- salt pinch
- powdered sugar 200 g
- olive oil 4 tbsp
- walnut kernels 100 g
- grapes, dark 850 g
Instructions
- 1. Pour lukewarm water into a bowl.
- 2. Crumble the yeast into the water.
- 3. Mix the yeast with one tablespoon of sugar until it has completely dissolved.
- 4. Let the mixture rest covered for about ten minutes.
- 5. Wash the rosemary thoroughly and dry it.
- 6. Pluck the rosemary needles from the stems.
- 7. Add the yeast water, flour, salt, powdered sugar, three tablespoons of olive oil, and the rosemary to a bowl.
- 8. Knead everything into a homogeneous dough.
- 9. Let the dough rise again for one hour.
- 10. Roughly chop the nuts in the meantime.
- 11. Wash the grapes well.
- 12. Let the grapes drain well.
- 13. Remove the stems from the grapes.
- 14. Preheat the oven to 180 degrees Celsius with fan (convection).
- 15. Knead the dough once more briefly.
- 16. Divide the dough into two equal halves.
- 17. Lightly dust a work surface with flour.
- 18. Roll out the two dough halves into flatbreads large enough for your baking sheet.
- 19. Let the flatbreads rest for another ten minutes.
- 20. Place one flatbread on a baking sheet lined with baking paper.
- 21. Distribute half of the nuts evenly over the dough.
- 22. Distribute half of the grapes evenly over the dough.
- 23. Sprinkle the toppings with two tablespoons of sugar.
- 24. Place the second dough flatbread on top.
- 25. Press the edges of the two dough halves together well.
- 26. Brush the surface with one tablespoon of oil.
- 27. Distribute the remaining nuts on the pizza.
- 28. Distribute the remaining grapes on the pizza.
- 29. Sprinkle everything with the remaining sugar.
- 30. Bake the pizza in the oven for about 35 to 40 minutes.
- 31. Remove the pizza when it is golden brown.
- 32. Enjoy the sweet grape pizza warm or cold.
