🍰 Sweet Yeast Bunnies

Ingredients
- milk 150 ml
- yeast, fresh 0.5 pcs
- sugar 200 g
- wheat flour, Type 405 600 g
- salt pinch
- butter 150 g
- eggs 2 pcs
- raspberry fruit spread 100 ml
- lemons 1 pcs
- powdered sugar 100 g
Instructions
- 1. Gently warm the milk in a pot.
- 2. Crumble the yeast into a bowl.
- 3. Dissolve the yeast with one tablespoon of sugar in the lukewarm milk.
- 4. Cover the bowl.
- 5. Let the mixture rest for about 10 minutes.
- 6. Mix the remaining sugar, flour, salt, and butter pieces in a bowl.
- 7. Add the yeast milk and the eggs.
- 8. Knead everything into a smooth dough with your hands.
- 9. Cover the bowl with a clean kitchen towel.
- 10. Let the dough rise in a warm place for about 1 hour.
- 11. Wait until the dough has roughly doubled in size.
- 12. Preheat the oven to 180 °C (fan).
- 13. Sprinkle flour on a work surface.
- 14. Roll out the dough into a rectangle about 1 cm thick.
- 15. Spread fruit spread over the dough.
- 16. Leave the top third of the dough unspread.
- 17. Roll up the dough from the longer, spread side.
- 18. Cut the dough into pieces about 5 cm thick.
- 19. Make cuts about 5 cm deep at the ends of the rolls.
- 20. Gently pull the dough strands apart to form ears.
- 21. Place the pieces on a baking tray lined with parchment paper.
- 22. Let the bunnies rest for about 20 minutes.
- 23. Bake the bunnies in the oven for about 20 minutes.
- 24. Cut a lemon in half.
- 25. Squeeze out the juice.
- 26. Mix powdered sugar with 2 tablespoons of lemon juice in a bowl.
- 27. Stir the mixture into a thick glaze.
- 28. Remove the bunnies from the oven.
- 29. Pour the glaze over the warm pieces.
- 30. Serve the bunnies warm or cold.
