  1. 1. Take the puff pastry rolls out of the fridge 15 to 30 minutes before you start so they become pliable and do not tear when rolling.
  2. 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  3. 3. Prepare several baking trays by lining them with non-stick baking paper.
  4. 4. Whisk the sour cream, powdered sugar, vanilla extract, cinnamon, and starch in a bowl until the cream is completely smooth and free of lumps.
  5. 5. Core the pear and slice it into very thin slices.
  6. 6. Drizzle the pear slices immediately with lemon juice to prevent them from browning.
  7. 7. Slice the grapes.
  8. 8. Chop the walnuts coarsely.
  9. 9. Place two pear slices slightly overlapping on the prepared tray.
  10. 10. Make sure there is enough space between the individual pieces.
  11. 11. Set aside about one-third of the walnuts to use for decoration later.
  12. 12. Sprinkle the remaining walnuts over the pear slices.
  13. 13. Place the grape slices on the filling.
  14. 14. Add the prepared cream filling using a medium ice cream scoop onto the fruit.
  15. 15. Distribute the honey evenly over the cream.
  16. 16. Place a second puff pastry sheet over the filling.
  17. 17. Press the two pastry sheets firmly together using a rolling pin.
  18. 18. Cut the whole thing into rectangles.
  19. 19. Place the rectangles on the tray so that the filling is well enclosed.
  20. 20. Decorate the tarts with the reserved walnuts.
  21. 21. Bake the pieces in the preheated oven until they are golden brown and crispy.
