🍽️ Strammer Max on Meatloaf with Fried Potatoes

Ingredients
- potatoes, mainly waxy 1 kg
- oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- onions, red 2 pcs
- pickles 2 pcs
- parsley, fresh 20 g
- sugar pinch
- liverwurst 600 g
- butter 2 tbsp
- eggs 4 pcs
- rustic bread 4 slices
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan.
- 2. Wash the potatoes thoroughly.
- 3. Slice the potatoes thinly.
- 4. Toss the potato slices in a bowl with two tablespoons of oil, salt, and pepper.
- 5. Line a baking tray with baking paper.
- 6. Spread the potatoes out on the tray so they do not overlap.
- 7. Bake the potatoes for 20 to 25 minutes until crispy.
- 8. Set the bowl aside and clean it.
- 9. Halve the onions and peel them.
- 10. Dice the onions into small cubes.
- 11. Finely dice the gherkins.
- 12. Wash the parsley and shake off excess water.
- 13. Pluck the parsley leaves and chop them finely.
- 14. Add the onions, gherkins, and parsley to the clean bowl.
- 15. Mix the ingredients with two tablespoons of pickle juice and one tablespoon of oil.
- 16. Season the mixture with salt and sugar.
- 17. Pat the meatloaf dry with a kitchen towel.
- 18. Heat one tablespoon of oil in a pan over medium heat.
- 19. Fry the meatloaf slices in pairs for about two minutes on each side until golden brown.
- 20. Place the fried meat into a baking dish.
- 21. Keep the meat warm in the oven until serving.
- 22. Let the pan cool down without cleaning it.
- 23. Add two tablespoons of butter and a pinch of salt to the pan drippings.
- 24. Heat the butter over low to medium heat.
- 25. Carefully crack the eggs into the pan.
- 26. Let the eggs set for three to four minutes.
- 27. Toast the rustic bread in the meantime.
- 28. Set aside about one quarter of the gherkin-onion mixture.
- 29. Take the fried potatoes out of the oven.
- 30. Mix the potatoes in the bowl with the remaining relish.
- 31. Taste the potatoes again and adjust seasoning.
- 32. Halve the toast bread.
- 33. Spread butter on the bread.
- 34. Arrange the fried potatoes on plates.
- 35. Place the meatloaf and fried eggs on the bread.
- 36. Garnish the dish with the remaining relish.
- 37. Serve the Strammer Max immediately.
