  3. 3. Slice the spring onions into thin rings.

  5. 5. Pat the chives dry with a kitchen towel.
  6. 6. Cut the chives into small pieces.
  7. 7. Melt 1 tablespoon of butter in a frying pan over medium heat.
  8. 8. Toast the bread in the pan for about 1 minute on each side until golden brown.
  9. 9. Remove the toasted bread from the pan and set it aside.
  10. 10. Fry the ham in the same pan for about 1 minute on each side.
  11. 11. Remove the ham from the pan and set it aside.
  12. 12. Reheat the pan with 1 tablespoon of butter over medium heat.
  13. 13. Crack the eggs directly into the hot pan.
  14. 14. Fry the eggs for about 4 minutes until they are sunny-side up.
  15. 15. Season the sunny-side up eggs with salt and pepper.
  16. 16. Place one slice of ham on each piece of bread.
  17. 17. Place a sunny-side up egg on each slice of ham.
  18. 18. Garnish the dishes with the rings of the spring onions.
  19. 19. Sprinkle the chopped chives over the dishes.
  20. 20. Serve the Strammer Max on plates.
