🍰 Stracciatella Cake with Chocolate Glaze

Ingredients
- butter 1 tbsp
- sugar 200 g
- salt pinch
- vanilla sugar 2 tsp
- eggs 4 pcs
- wheat flour, Type 405 400 g
- baking powder 3 tsp
- milk 75 ml
- Amaretto 3 tbsp
- chocolate sprinkles, dark chocolate 150 g
- dark chocolate coating 150 g
- whipping cream 200 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Mix 100 grams of butter, sugar, a pinch of salt, and vanilla sugar in a bowl with a hand mixer until the mixture is creamy.
- 3. Add the eggs one by one and mix each egg in well before adding the next one.
- 4. Mix flour and baking powder in a separate bowl.
- 5. Stir the flour mixture together with the milk and Amaretto into the butter-egg mixture briefly.
- 6. Gently fold the chocolate chips into the batter.
- 7. Pour the batter into a greased loaf pan.
- 8. Bake the cake for about 60 minutes in the oven until it is golden brown.
- 9. Loosely cover the surface of the cake with aluminum foil towards the end of the baking time if it is browning too much.
- 10. Remove the cake from the oven and let it cool on a wire rack.
- 11. Remove the cake from the pan once it has cooled down.
- 12. Chop the chocolate coating into small pieces.
- 13. Bring cream and one tablespoon of butter to a boil in a saucepan.
- 14. Remove the saucepan from the heat and stir in the chocolate pieces until they are completely melted.
- 15. Let the chocolate cream cool for about one hour and stir it occasionally.
- 16. Spread the cream evenly over the cooled cake as soon as it is thick but still spreadable.
