🍰 Orange and Lemon Stollen Bites

Ingredients
- Organic Lemons 1 pc.
- Oranges 1 pc.
- Almonds, whole 100 g
- Milk 100 ml
- Yeast, fresh 0.5 pc.
- Sugar 60 g
- Vanilla Sugar 1 tsp
- Wheat flour, Type 405 400 g
- Cinnamon 0.25 tsp
- Salt pinch
- Butter 200 g
- Eggs 2 pc.
- Raisins 50 g
- Icing sugar 200 g
Instructions
- 1. Wash the lemon and the orange thoroughly.
- 2. Grate one teaspoon of zest from each fruit.
- 3. Chop the almonds coarsely.
- 4. Warm the milk in a pot for about one minute until it is lukewarm.
- 5. Crumble the yeast into a small bowl.
- 6. Dissolve the yeast with one tablespoon of sugar in the lukewarm milk.
- 7. Let the yeast milk rise covered for about 15 minutes.
- 8. Mix the remaining sugar, vanilla sugar, flour, cinnamon, salt, and 80 grams of butter in pieces in a large bowl.
- 9. Add the yeast milk, eggs, raisins, chopped almonds, and lemon and orange zest to the flour mixture.
- 10. Knead everything into a smooth dough.
- 11. Divide the dough into two equal halves.
- 12. Shape each half into a roll about 5 centimeters thick.
- 13. Cut slices about 3 centimeters thick from the rolls.
- 14. Press the slices slightly flat.
- 15. Place the pieces on a baking sheet lined with baking paper.
- 16. Let the pieces rise for about 45 minutes.
- 17. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 18. Bake the stollen bites in the oven for about 12 to 15 minutes.
- 19. Melt 120 grams of butter in a pot over low heat.
- 20. Put powdered sugar into a bowl.
- 21. Brush the warm stollen bites with the melted butter.
- 22. Roll the pieces in the powdered sugar until completely covered.
- 23. Let the confection cool on a wire rack.
- 24. Store the stollen bites airtight or serve immediately.
- 25. Ideally, let the confection mature for 7 to 14 days for even better flavor.
