  1. 1. Rinse the pork tenderloin under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Slice the tenderloin into very thin slices.
  4. 4. Place the meat slices into a bowl.
  5. 5. Pour 1 ½ tablespoons of soy sauce over the meat.
  6. 6. Add some honey.
  7. 7. Mix everything well so the meat is marinated.
  8. 8. Set the bowl aside to let the meat marinate.
  9. 9. Take your time while the meat rests.
  10. 10. Halve the onion.
  11. 11. Peel the onion.
  12. 12. Cut the onion into thin strips.
  13. 13. Wash the Pak Choi thoroughly.
  14. 14. Let the vegetable drain well.
  15. 15. Separate the white stems from the green leaves.
  16. 16. Cut the white stems into thin strips.
  17. 17. Also cut the green leaves into thin strips.
  18. 18. Wash the lime.
  19. 19. Halve the lime.
  20. 20. Squeeze the juice out of the lime.
  21. 21. Heat 2 tablespoons of oil in a frying pan or wok.
  22. 22. Set the heat to the highest level.
  23. 23. Add the onion strips to the hot pan.
  24. 24. Add the white Pak Choi stems.
  25. 25. Fry the vegetables for about 4 minutes.
  26. 26. Season the mixture with cinnamon.
  27. 27. Add some lime juice.
  28. 28. Remove the vegetables from the pan.
  29. 29. Wipe the pan or wok clean.
  30. 30. Add the remaining oil to the clean pan.
  31. 31. Heat the oil on the highest setting.
  32. 32. Add the marinated meat to the pan.
  33. 33. Fry the meat on high heat.
  34. 34. Turn the meat repeatedly.
  35. 35. Fry the meat for about 5 minutes.
  36. 36. Add the green Pak Choi leaves.
  37. 37. Let the leaves wilt for about 1 minute.
  38. 38. Add the previous vegetables back into the pan.
  39. 39. Sprinkle the dish with sesame seeds.
  40. 40. Pour in the remaining soy sauce.
  41. 41. Add a little more lime juice.
  42. 42. Taste the dish to finish seasoning.
