🍽️ Crispy Sausage, Cabbage and Walnut Stir-Fry

Ingredients
- white cabbage 0.5 pcs
- onions, red 1 pcs
- ham sausage or frankfurter 540 g
- walnut kernels 4 tbsp
- salt pinch
- garlic cloves 1 pcs
- mustard 1 tbsp
- paprika, sweet 0.5 tsp
- cumin pinch
- balsamic vinegar, light 1 tbsp
- pepper, black ground pinch
- sugar pinch
- dill, fresh 20 g
- chives, fresh 10 g
Instructions
- 1. Halve the cabbage head and remove the hard core in the center.
- 2. Cut the cabbage flesh into pieces about 4 to 5 centimeters in size.
- 3. Wash the cabbage pieces thoroughly and dry them in a salad spinner.
- 4. Halve the onion, peel it, and cut it into thin strips.
- 5. Cut the sausages into small cubes of about 0.5 centimeters in size.
- 6. Roughly chop the walnuts.
- 7. Heat 1 tablespoon of oil in a pan over medium heat.
- 8. Toast the walnuts in it for 2 to 4 minutes until golden brown.
- 9. Remove the walnuts from the pan and set them aside in a bowl.
- 10. Wipe the pan briefly and add another 1 tablespoon of oil.
- 11. Heat the oil over medium to high heat.
- 12. Fry the sausage cubes for about 3 minutes until crispy.
- 13. Reduce the heat to medium and add the onion strips.
- 14. Fry the onions for about 2 minutes along with the sausage.
- 15. Add the sausage-onion mixture to the walnuts in the bowl.
- 16. Add 2 tablespoons of oil to the pan and heat it over medium heat.
- 17. Add half of the cabbage to the pan and season it with a little salt.
- 18. Fry the cabbage for 3 to 4 minutes, shaking the pan occasionally.
- 19. Add the remaining cabbage and season it with salt again.
- 20. Fry the cabbage for another 4 to 5 minutes until it still has some crunch.
- 21. Shake the pan occasionally while frying the cabbage.
- 22. Peel the garlic and grate it finely or press it.
- 23. In a bowl, mix the garlic, mustard, paprika powder, cumin, 1 tablespoon of water, and vinegar.
- 24. Stir 3 tablespoons of oil into the spice mixture.
- 25. Season the dressing with salt, pepper, and sugar to taste.
- 26. Wash the dill and chives and shake them dry.
- 27. Cut the chives into thin rings.
- 28. Remove the coarse stems from the dill and chop the leaves finely.
- 29. Mix the fried cabbage with the sausage-onion-nut mixture.
- 30. Add the prepared dressing and mix everything well.
- 31. If necessary, add a little more oil and season with salt and pepper to taste.
- 32. Serve the dish on plates.
- 33. Sprinkle it with the chopped herbs and serve hot.
