🍽️ Crispy Beef Fillet Steaks with Apple Crust, Potato Dumplings, and Red Cabbage

Ingredients
- Salt pinch
- Beef filet steaks 600 g
- Onions, yellow 2 pcs.
- Oil 3 tbsp
- Red cabbage from the jar 700 ml
- Sugar pinch
- Cinnamon pinch
- Water 60 ml
- Mini potato dumplings 750 g
- Apples, red 2 pcs.
- Almonds, whole 50 g
- Butter 6 tbsp
- Honey 1 tbsp
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Bring about 4 liters of water with salt to a boil in a large pot.
- 3. Rinse the beef fillet steaks under running water.
- 4. Pat the meat dry with a kitchen towel.
- 5. Let the steaks rest at room temperature for a short time.
- 6. Cut the onions in half.
- 7. Remove the outer skin of the onions.
- 8. Dice the onions into very small cubes.
- 9. Heat 1 tablespoon of oil in a pot on medium heat.
- 10. Add the onion cubes to the hot oil.
- 11. Sauté the onions for about 2 minutes.
- 12. Wait until the onions become translucent and colorless.
- 13. Add the red cabbage to the pot with the onions.
- 14. Season the vegetables with salt, sugar, and cinnamon.
- 15. Pour about 60 milliliters of water into the pot.
- 16. Cover the pot with a lid.
- 17. Cook the red cabbage for about 20 minutes, stirring occasionally.
- 18. Add the potato dumplings to the bubbling salted water.
- 19. Let the dumplings cook for about 10 minutes without a lid.
- 20. Make sure the water does not boil vigorously.
- 21. Remove the cooked dumplings from the water with a slotted spoon.
- 22. Let the dumplings drain for a short moment.
- 23. Place the dumplings on a large plate.
- 24. Wash the apples thoroughly under running water.
- 25. Peel the apples completely.
- 26. Grate the apples coarsely towards the core side.
- 27. Set aside half of the grated apples.
- 28. Mix the remaining half of the apples with the juice into the red cabbage.
- 29. Place the remaining grated apple between two layers of kitchen paper.
- 30. Squeeze the apple thoroughly to remove the moisture.
- 31. Place the squeezed apple into a bowl.
- 32. Add almonds and 4 tablespoons of soft butter to the apple mixture.
- 33. Season the apple mixture generously with salt and pepper.
- 34. Heat 1 tablespoon of oil in a frying pan on high heat.
- 35. Fry the beef steaks for about 2 minutes on all sides.
- 36. Season the meat with salt after frying.
- 37. Place the steaks on a baking sheet.
- 38. Distribute the apple mixture evenly over the steaks.
- 39. Place the baking sheet in the upper third of the oven.
- 40. Bake the steaks for about 8 to 10 minutes until golden brown.
- 41. Do not clean the pan, but use the cooking residues.
- 42. Heat 1 tablespoon of oil and butter in the pan on medium heat.
- 43. Fry the potato dumplings until golden brown on all sides.
- 44. This process takes about 3 to 5 minutes.
- 45. Add honey and 1 tablespoon of butter to the red cabbage.
- 46. Season the red cabbage generously with salt and pepper.
- 47. Remove the baked beef fillet steaks from the oven.
- 48. Plate the steaks together with the red cabbage and dumplings.
- 49. Serve the dish immediately and enjoy your meal.
