🍽️ Crispy Pork Steaks with Fresh Mango-Chili Salsa and Oven Potatoes

Ingredients
- Pork loin steaks, seasoned with paprika 600 g
- small potatoes, mainly firm 1 kg
- oil 3 tbsp
- salt pinch
- organic limes 1 pc.
- cherry tomatoes 200 g
- mango 1 pc.
- mint, fresh 10 g
- cilantro, fresh 10 g
- chili salt pinch
- brown sugar pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Take the pork loin steaks out of the fridge to let them reach room temperature.
- 3. Wash the potatoes thoroughly.
- 4. Cut the potatoes into wedges.
- 5. Place the potato wedges on a baking sheet lined with baking paper.
- 6. Add 2 tablespoons of oil and some salt to the potatoes.
- 7. Mix everything well so the potatoes are evenly coated.
- 8. Bake the potatoes in the oven for about 25 minutes until golden brown.
- 9. Wash the lime under running water.
- 10. Grate the fine green zest of the lime (this is the outer layer without the white pith).
- 11. Cut the lime in half.
- 12. Squeeze the juice out of the lime.
- 13. Wash the tomatoes.
- 14. Cut the tomatoes into very small cubes.
- 15. Peel the mango.
- 16. Carefully cut the flesh away from the large pit.
- 17. Cut the mango flesh into cubes with a size of about 0.2 to 0.5 centimeters.
- 18. Wash the mint and the coriander.
- 19. Shake the herbs dry to remove excess water.
- 20. Pluck the leaves off the stems.
- 21. Finely chop the mint and the coriander.
- 22. Add the mango cubes, tomato cubes, coriander, and mint into a bowl.
- 23. Add 1 teaspoon of lime juice to the mixture.
- 24. Season the salsa with chili salt and cane sugar to taste.
- 25. Mix all ingredients for the salsa well.
- 26. Heat 1 tablespoon of oil in a pan on high heat.
- 27. Place the steaks into the hot oil.
- 28. Sear the steaks on all sides for about 2 to 3 minutes until crispy.
- 29. Take the potatoes out of the oven.
- 30. Salt the hot potatoes once more.
- 31. Sprinkle the lime zest over the potatoes.
- 32. Place the steaks on the plates.
- 33. Add the mango salsa to the steaks.
- 34. Add the seasoned potato wedges.
- 35. Drizzle some of the remaining lime juice over the finished dish.
- 36. Serve the food immediately and enjoy your meal!
