  1. 1. Preheat the oven to 200 degrees Celsius with fan setting.
  2. 2. Take the pork loin steaks out of the fridge to let them reach room temperature.
  3. 3. Wash the potatoes thoroughly.
  4. 4. Cut the potatoes into wedges.
  5. 5. Place the potato wedges on a baking sheet lined with baking paper.
  6. 6. Add 2 tablespoons of oil and some salt to the potatoes.
  7. 7. Mix everything well so the potatoes are evenly coated.
  8. 8. Bake the potatoes in the oven for about 25 minutes until golden brown.
  9. 9. Wash the lime under running water.
  10. 10. Grate the fine green zest of the lime (this is the outer layer without the white pith).
  11. 11. Cut the lime in half.
  12. 12. Squeeze the juice out of the lime.
  13. 13. Wash the tomatoes.
  14. 14. Cut the tomatoes into very small cubes.
  15. 15. Peel the mango.
  16. 16. Carefully cut the flesh away from the large pit.
  17. 17. Cut the mango flesh into cubes with a size of about 0.2 to 0.5 centimeters.
  18. 18. Wash the mint and the coriander.
  19. 19. Shake the herbs dry to remove excess water.
  20. 20. Pluck the leaves off the stems.
  21. 21. Finely chop the mint and the coriander.
  22. 22. Add the mango cubes, tomato cubes, coriander, and mint into a bowl.
  23. 23. Add 1 teaspoon of lime juice to the mixture.
  24. 24. Season the salsa with chili salt and cane sugar to taste.
  25. 25. Mix all ingredients for the salsa well.
  26. 26. Heat 1 tablespoon of oil in a pan on high heat.
  27. 27. Place the steaks into the hot oil.
  28. 28. Sear the steaks on all sides for about 2 to 3 minutes until crispy.
  29. 29. Take the potatoes out of the oven.
  30. 30. Salt the hot potatoes once more.
  31. 31. Sprinkle the lime zest over the potatoes.
  32. 32. Place the steaks on the plates.
  33. 33. Add the mango salsa to the steaks.
  34. 34. Add the seasoned potato wedges.
  35. 35. Drizzle some of the remaining lime juice over the finished dish.
  36. 36. Serve the food immediately and enjoy your meal!
