🍽️ Beef Steaks with Herb Butter, Kohlrabi and Fan Potatoes

Ingredients
- butter 6 tbsp
- beef fillet steaks 600 g
- potatoes, waxy 1 kg
- oil 4 tbsp
- salt pinch
- organic limes 1 pc.
- parsley, fresh 20 g
- kohlrabi 3 pc.
- pepper, black ground pinch
- whipping cream 100 g
Instructions
- 1. Preheat the oven to 240 degrees Celsius with fan setting.
- 2. Take the butter out of the fridge to let it soften.
- 3. Wash the beef fillet steaks and pat them dry with kitchen paper.
- 4. Let the steaks come to room temperature.
- 5. Wash the potatoes thoroughly.
- 6. Cut the potatoes into slices about 0.3 cm thick.
- 7. Cut the potatoes in a fan shape, but do not cut all the way through.
- 8. Place the potatoes between two wooden spoon handles to keep them stable.
- 9. Place the potatoes on a baking tray with the cut side facing up.
- 10. Drizzle the potatoes with 2 tablespoons of oil.
- 11. Lightly salt the potatoes.
- 12. Bake the potatoes in the oven for 25 to 30 minutes.
- 13. Wash the lime under running water.
- 14. Cut the lime in half.
- 15. Squeeze the juice from the lime.
- 16. Wash the parsley thoroughly.
- 17. Shake the parsley dry.
- 18. Pluck the parsley leaves from the stems.
- 19. Finely chop the parsley leaves.
- 20. Mix the softened butter with the chopped herbs in a bowl.
- 21. Season the butter mixture with salt.
- 22. Add 1 teaspoon of lime juice to the butter mixture.
- 23. Set the herb butter aside.
- 24. Peel the kohlrabi.
- 25. Remove fibrous parts from the kohlrabi.
- 26. Dice the kohlrabi into pieces about 0.5 cm in size.
- 27. Heat 2 tablespoons of oil in a pan on high heat.
- 28. Sear the steaks for about 2 minutes on each side.
- 29. Reduce the heat to medium.
- 30. Continue cooking the meat for a total of about 6 minutes.
- 31. Season the steaks with salt and pepper.
- 32. Wrap the steaks in aluminum foil.
- 33. Let the steaks rest in the foil for about 10 minutes.
- 34. Reheat the pan with the pan drippings.
- 35. Add the kohlrabi cubes to the hot pan.
- 36. Fry the kohlrabi on high heat for about 8 minutes until golden brown.
- 37. Shake the pan occasionally to prevent the kohlrabi from burning.
- 38. Season the kohlrabi with salt.
- 39. Add cream to the kohlrabi in the pan.
- 40. Let the mixture simmer for about 2 to 3 minutes.
- 41. Taste the kohlrabi and adjust with salt, pepper, and lime juice.
- 42. Take the steaks out of the aluminum foil.
- 43. Add the released meat juices to the kohlrabi.
- 44. Take the potatoes out of the oven.
- 45. Arrange the fan potatoes on plates.
- 46. Place the steaks next to the potatoes.
- 47. Add the kohlrabi vegetables.
- 48. Place a piece of herb butter on the steaks.
