  1. 1. Bring about 4 liters of salted water to a boil in a large pot. Preheat the oven to 200 degrees Celsius with top and bottom heat. Rinse the pork steaks and pat them dry with a kitchen towel. Gently flatten the steaks and let them come to room temperature on a plate.
  2. 2. Halve the onions and peel them. Cut the onions into fine cubes. Warm 1 tablespoon of oil in a pot over medium heat. Add the onion cubes and sweat them for about 2 minutes until they become translucent. Add the red cabbage. Season with salt, sugar, and cinnamon. Pour in about 60 milliliters of water. Cover the pot with a lid and let the red cabbage cook over medium heat for about 20 minutes, stirring occasionally.
  3. 3. Add the potato dumplings to the boiling salted water. Cook the dumplings without a lid for about 10 minutes. Ensure the water is simmering gently and not boiling vigorously. Remove the dumplings with a slotted spoon. Let them drain well. Place the dumplings on a large plate and keep them warm.
  4. 4. Wash the apples and peel them. Grate four apples coarsely down to the core using a grater. Mix half of the grated apple including its juice into the cooked red cabbage. Take the remaining grated apple and squeeze it well between two layers of kitchen paper. Mix the squeezed apple in a bowl with almonds and 4 tablespoons of soft butter. Season the apple mixture generously with salt and pepper.
  5. 5. Heat 1 tablespoon of oil in a frying pan over high heat. Sear the steaks on all sides for about 2 minutes. Season the meat with salt. Place the steaks on a baking sheet. Distribute the apple mixture evenly over the steaks. Bake the steaks in the upper part of the oven for about 7 to 9 minutes until golden brown. Do not clean the pan as the cooking fat is still needed.
  6. 6. Heat 1 tablespoon of oil and 1 tablespoon of butter in the remaining cooking fat from the pan over medium heat. Fry the potato dumplings all around for about 3 to 5 minutes until golden brown. Add honey and 1 tablespoon of butter to the red cabbage. Season the red cabbage generously with salt and pepper.
  7. 7. Remove the golden-brown baked pork steaks from the oven. Plate the steaks together with the red cabbage and potato dumplings. Serve the dish immediately. Tip: If you gently pound the steaks between two layers of cling film using a meat mallet or a heavy pot handle, the meat fibers will be broken down and the meat will become more tender.
