  1. 1. Preheat the oven to 220 degrees Celsius with fan.
  2. 2. Wash the potatoes thoroughly and cut them into fries with the skin on.
  3. 3. Toss the fries in a bowl with two tablespoons of olive oil.
  4. 4. Spread the fries out on a baking sheet lined with baking paper.
  5. 5. Bake the fries for 20 to 25 minutes until golden brown.
  6. 6. Remove the fries from the oven and leave the bowl they were in uncleaned.
  7. 7. Rinse the meat and pat it dry with a kitchen towel.
  8. 8. Season the meat with salt on both sides.
  9. 9. Let the meat rest at room temperature.
  10. 10. Wash the cucumber and radishes and trim the ends.
  11. 11. Slice or shred the vegetables into thin pieces.
  12. 12. Whisk two tablespoons of olive oil with vinegar, mustard, salt, pepper, and sugar in a bowl.
  13. 13. Add the prepared vegetables to the dressing mixture.
  14. 14. Mix everything well and set the salad aside.
  15. 15. Heat oil in a pan over high heat.
  16. 16. Sear the steaks on all sides for about four minutes.
  17. 17. Reduce the heat and cover the steaks.
  18. 18. Cook the steaks for another four to five minutes.
  19. 19. Season the steaks with steak pepper.
  20. 20. Wrap the steaks in aluminum foil and let them rest.
  21. 21. Wash the chives and dry them thoroughly.
  22. 22. Cut the chives into fine rings.
  23. 23. Add the chives to the salad.
  24. 24. Season the salad with salt and pepper if needed.
  25. 25. Grate the Parmesan finely.
  26. 26. Put the fries back into the uncleaned bowl.
  27. 27. Toss the fries and gradually stir in the Parmesan and salt.
  28. 28. Serve the Parmesan fries together with the steaks on plates.
  29. 29. Serve the cucumber-radish salad on the side.
