  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Take the steaks out of the fridge to let them reach room temperature.
  3. 3. Rinse the herbs, pluck off the leaves or needles, and chop them finely.
  4. 4. Peel the garlic and chop it finely as well.
  5. 5. Rinse the lemon under hot water, finely grate about one teaspoon of the zest, and squeeze out the juice.
  6. 6. In a bowl, mix the soft butter with the herbs, lemon juice, lemon zest, and a pinch of salt and pepper.
  7. 7. Spread the oven fries evenly on a baking sheet lined with baking paper.
  8. 8. Bake the fries in the oven for about 20 minutes until golden brown.
  9. 9. Rinse the steaks and pat them dry with a kitchen towel.
  10. 10. Season the steaks with salt.
  11. 11. Heat one tablespoon of oil in a pan over high heat.
  12. 12. Sear the steaks for 2 to 3 minutes on each side.
  13. 13. Remove the steaks from the pan, wrap them in aluminum foil, and let them rest for about 5 minutes.
  14. 14. Take the fries out of the oven and season them to your liking.
  15. 15. Pepper the steaks.
  16. 16. Serve the steaks together with the fries on plates.
