  1. 1. Rinse the steak, pat dry with a kitchen towel, and season with salt and pepper. Wash the tomatoes thoroughly and slice them into paper-thin slices. Halve the shallots, peel them, and dice finely. Wash the thyme, pat dry, and pick the leaves off the stems.
  2. 2. In a bowl, mix olive oil, honey, balsamic vinegar, mustard, shallots, and thyme well. Season with salt and pepper. Arrange the tomato slices evenly on a plate and pour the dressing over them.
  3. 3. Heat the butter in a pan over high heat and sear the steak for about 3 minutes per side. Then remove the pan from the heat and let the steak rest covered for approx. 5 minutes.
