  1. 1. Sort out the green peppers from the mix and use them for another purpose.
  2. 2. Wash the remaining peppers, remove the greens, and slice them including the seeds.
  3. 3. Peel the garlic and chop it roughly.
  4. 4. Place the peppers, garlic, brown sugar, vinegar, and water into a tall container.
  5. 5. Blend the mixture with a hand blender until it is smooth.
  6. 6. Pour the puree into a pot.
  7. 7. Simmer the sauce over low heat, stirring constantly, for about 30 minutes.
  8. 8. Season the finished sauce with salt to taste.
  9. 9. Fill the hot sauce into clean jars.
