🍰 Spritzkuchen with Lime and Espresso Glaze

Ingredients
- Organic Limes 1 pc.
- Water 300 ml
- coffee, instant 1 tsp
- powdered sugar 80 g
- chocolate, dark 10 g
- butter 25 g
- wheat flour, Type 405 80 g
- cornstarch 15 g
- brown sugar 20 g
- vanilla sugar 10 g
- eggs 3 pcs.
- rapeseed oil 200 ml
Instructions
- 1. Thoroughly wash the lime under hot water.
- 2. Grate about one teaspoon of the lime zest.
- 3. Cut the lime in half and squeeze out the juice.
- 4. Warm about 50 milliliters of water in a pot over medium heat.
- 5. Dissolve the coffee in the warm water.
- 6. Let the coffee mixture cool down.
- 7. Sift powdered sugar into a bowl.
- 8. Take half of the powdered sugar and mix it with the lime juice.
- 9. Stir until a thick glaze forms.
- 10. Take the other half of the powdered sugar and mix it with the cooled espresso.
- 11. Stir until a thick glaze forms.
- 12. Set both glaze bowls aside, covered.
- 13. Grate the chocolate coarsely.
- 14. Bring about 250 milliliters of water with butter to a boil in a pot.
- 15. Mix flour, starch, sugar, and vanilla sugar in a separate bowl.
- 16. Add the flour mixture all at once to the boiling butter-water mixture.
- 17. Stir with a hand mixer and dough hooks until a dough ball forms.
- 18. Remove the pot from the heat.
- 19. Work the eggs into the dough one by one.
- 20. Fill the dough into a piping bag with a star tip.
- 21. Pipe about eight wreaths onto a greased baking sheet.
- 22. Let the wreaths dry for about five minutes.
- 23. Heat oil in a pot or deep fryer on the highest setting.
- 24. Check the oil temperature by holding a wooden spoon handle in the oil.
- 25. The oil is ready when bubbles rise from the wood.
- 26. Slide the spritz cakes into the hot oil in batches from the baking sheet.
- 27. Fry the cakes for about four minutes until golden brown.
- 28. Turn the cakes halfway through the time.
- 29. Remove the spritz cakes from the oil.
- 30. Let them drain on kitchen paper.
- 31. Brush the warm cakes with the lime or espresso glaze.
- 32. Sprinkle the cakes with lime glaze with lime zest.
- 33. Decorate the other cakes with the grated chocolate.
- 34. Let the glaze set.
- 35. Serve the cakes best when fresh.
