  1. 1. Fill a large pot with about 4 liters of water and add plenty of salt.
  2. 2. Bring the salted water to a boil with the lid on.
  3. 3. Reduce the heat so that the water is just simmering and not boiling vigorously.
  4. 4. Place the dumplings into the gently simmering water.
  5. 5. Let the dumplings cook for about 12 minutes on low to medium heat.
  6. 6. Remove the dumplings from the water as soon as they float to the surface.
  7. 7. Cut the butter into coarse cubes.
  8. 8. Melt the butter in a pot over medium to high heat.
  9. 9. Watch closely for when the butter just starts to turn brown and smell nutty.
  10. 10. Pour the brown butter immediately into a pan to use as nut butter.
  11. 11. Grate the Alpine cheese coarsely.
  12. 12. Lift the finished dumplings out of the cooking water using a slotted spoon.
  13. 13. Add the dumplings directly to the pan with the nut butter.
  14. 14. Season the dumplings with a little salt.
  15. 15. Fry the dumplings until golden brown for 1 to 2 minutes by tossing them in the pan over medium heat.
  16. 16. Arrange the crispy dumplings on the plates.
  17. 17. Drizzle the dumplings with the remaining nut butter.
  18. 18. Sprinkle the grated Alpine cheese over them.
