  3. 3. Cut the tomatoes into quarters and remove the seeds.
  4. 4. Dice the tomato flesh into small pieces.
  5. 5. Peel the garlic and chop it finely.
  6. 6. Place the tomatoes and garlic into a bowl.
  7. 7. Add some olive oil, salt, pepper, and sugar.
  8. 8. Mix the ingredients well together.
  9. 9. Wash the spring onions and shake them dry.
  10. 10. Cut off the root ends of the spring onions.
  11. 11. Slice the spring onions diagonally into thin rings.
  12. 12. Clean the mushrooms with a kitchen cloth if necessary.
  13. 13. Slice the mushrooms into thin pieces.
  14. 14. Wash the leaf spinach thoroughly.
  15. 15. Let the spinach drain well.
  16. 16. Heat some oil in a pan over medium heat.
  17. 17. Add the spinach to the pan.
  18. 18. Let the spinach simmer for about 4 minutes until it wilts.
