  1. 1. Preheat the oven to 180 °C (convection). Wash the sweet potatoes thoroughly, peel them, and cut them into cubes. Toss the cubes in a bowl with the starch. Place the cubes on a baking sheet lined with parchment paper, season with olive oil, salt, and pepper, and bake for about 20 minutes until golden brown.
  2. 2. Drain the olives. Wash the spinach thoroughly and drain it well. Crumble the feta with your hands.
  3. 3. Puree the milk with a handful of spinach in a tall container. In a bowl, mix the eggs with the spinach milk, 2 tbsp oil, and a pinch of salt. Add the flour and stir everything well until you get a smooth mixture.
  4. 4. Heat 1 tbsp oil in a pan over medium heat and cook thin spinach pancakes one after the other.
  5. 5. Spread the pancakes thinly with cream cheese. Top with sweet potatoes, olives, spinach, and feta if desired, roll them up, and serve. Enjoy your meal!
