🍽️ Spinach Pancakes with Sweet Potatoes and Olives

Ingredients
- Sweet potatoes 2 pcs
- Starch 1 tbsp
- Olive oil 1 tbsp
- Salt pinch
- Pepper, black ground pinch
- Kalamata olives pitted 100 g
- Leaf spinach 100 g
- Feta 200 g
- Milk 350 ml
- Eggs 2 pcs
- Oil 5 tbsp
- Wheat flour, Type 405 200 g
- Cream cheese, plain 4 tbsp
Instructions
- 1. Preheat the oven to 180 °C (convection). Wash the sweet potatoes thoroughly, peel them, and cut them into cubes. Toss the cubes in a bowl with the starch. Place the cubes on a baking sheet lined with parchment paper, season with olive oil, salt, and pepper, and bake for about 20 minutes until golden brown.
- 2. Drain the olives. Wash the spinach thoroughly and drain it well. Crumble the feta with your hands.
- 3. Puree the milk with a handful of spinach in a tall container. In a bowl, mix the eggs with the spinach milk, 2 tbsp oil, and a pinch of salt. Add the flour and stir everything well until you get a smooth mixture.
- 4. Heat 1 tbsp oil in a pan over medium heat and cook thin spinach pancakes one after the other.
- 5. Spread the pancakes thinly with cream cheese. Top with sweet potatoes, olives, spinach, and feta if desired, roll them up, and serve. Enjoy your meal!
