  4. 4. Stir constantly with a whisk until the sauce comes to a boil.
  5. 5. Continue cooking the sauce until it is creamy.
  6. 6. Season the sauce with salt, pepper, and nutmeg.
  7. 7. Halve the onions and remove the skin.
  8. 8. Cut the onions into thin strips.
  9. 9. Peel the garlic and chop it finely.
  10. 10. Wash the leaf spinach thoroughly.
  11. 11. Spin the spinach dry.
  12. 12. Heat the oil in a frying pan over medium heat.
  13. 13. Sauté the onions and garlic for about three minutes.
  14. 14. Add the spinach to the pan.
  15. 15. Cover the pan and heat the spinach for about five minutes.
  16. 16. Wait until the spinach has completely collapsed.
  17. 17. Wash the lemon.
  18. 18. Grate about two teaspoons of lemon zest finely.
  19. 19. Squeeze the juice from the lemon.
  20. 20. Cut the smoked tofu into strips.
  21. 21. Preheat the oven to 160 degrees Celsius fan-assisted.
  22. 22. Place two ladles of sauce into a baking dish.
  23. 23. Spread some spinach over the sauce.
  24. 24. Place smoked tofu strips on top.
  25. 25. Drizzle some lemon juice over the layer.
  26. 26. Place lasagna sheets on top.
  27. 27. Repeat the layers until all ingredients are used up.
  28. 28. Spread the grated cheese over the top layer.
  29. 29. Sprinkle breadcrumbs over it.
  30. 30. Distribute the grated lemon zest evenly.
  31. 31. Bake the lasagna for about 30 minutes until golden brown.
