🍝 Creamy Spinach and Smoked Tofu Lasagna

Ingredients
- vegan margarine 50 g
- wheat flour, type 405 50 g
- oat drink Barista 1 L
- salt pinch
- pepper, white ground pinch
- nutmeg, ground pinch
- onions, red 1 pc.
- garlic cloves 2 pc.
- leaf spinach 1 kg
- oil 2 tbsp
- lemons 1 pc.
- smoked tofu 350 g
- lasagna sheets 300 g
- Vemondo Grating Delight 150 g
- breadcrumbs 2 tbsp
Instructions
- 1. Melt the margarine in a pot over medium heat.
- 2. Stir in the flour and heat the mixture for about one minute.
- 3. Pour in the oat drink (Barista variety).
- 4. Stir constantly with a whisk until the sauce comes to a boil.
- 5. Continue cooking the sauce until it is creamy.
- 6. Season the sauce with salt, pepper, and nutmeg.
- 7. Halve the onions and remove the skin.
- 8. Cut the onions into thin strips.
- 9. Peel the garlic and chop it finely.
- 10. Wash the leaf spinach thoroughly.
- 11. Spin the spinach dry.
- 12. Heat the oil in a frying pan over medium heat.
- 13. Sauté the onions and garlic for about three minutes.
- 14. Add the spinach to the pan.
- 15. Cover the pan and heat the spinach for about five minutes.
- 16. Wait until the spinach has completely collapsed.
- 17. Wash the lemon.
- 18. Grate about two teaspoons of lemon zest finely.
- 19. Squeeze the juice from the lemon.
- 20. Cut the smoked tofu into strips.
- 21. Preheat the oven to 160 degrees Celsius fan-assisted.
- 22. Place two ladles of sauce into a baking dish.
- 23. Spread some spinach over the sauce.
- 24. Place smoked tofu strips on top.
- 25. Drizzle some lemon juice over the layer.
- 26. Place lasagna sheets on top.
- 27. Repeat the layers until all ingredients are used up.
- 28. Spread the grated cheese over the top layer.
- 29. Sprinkle breadcrumbs over it.
- 30. Distribute the grated lemon zest evenly.
- 31. Bake the lasagna for about 30 minutes until golden brown.
- 32. Let the lasagna cool down for a short while.
- 33. Cut the lasagna into pieces.
- 34. Serve the dish.
