🍝 Creamy Spinach and Mushroom Lasagna

Ingredients
- salt 1 tbsp
- spinach leaves 400 g
- mushrooms, white 600 g
- oil 3 tbsp
- nutmeg, ground pinch
- wheat flour, Type 405 3 tbsp
- vegetable broth 400 ml
- milk 100 ml
- pepper, black ground pinch
- lasagna sheets 150 g
- parmesan, grated 50 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Fill a large pot with three liters of water and add salt.
- 3. Thoroughly wash the spinach under running water.
- 4. Separate the spinach leaves from the stems.
- 5. Cut the stems into strips about one centimeter thick.
- 6. Bring the salted water in the pot to a rolling boil.
- 7. Cook the spinach stems in the boiling water for five minutes.
- 8. Drain the stems and rinse them immediately with cold water.
- 9. Keep the cooking water ready for the next step.
- 10. Add the spinach leaves to the hot salted water.
- 11. Let the leaves cook in the water for one minute.
- 12. Drain the leaves and shock them with cold water.
- 13. Empty and clean the pot.
- 14. Clean the mushrooms with a kitchen towel.
- 15. Cut the mushrooms into six equal pieces.
- 16. Heat oil in the clean pot over high heat.
- 17. Fry the mushrooms together with grated nutmeg for three minutes.
- 18. Stir the flour into the mushroom mixture.
- 19. Toast the flour with the mixture for one minute.
- 20. Deglaze the mixture with broth and milk.
- 21. Add the drained spinach to the sauce.
- 22. Season the sauce with salt and pepper.
- 23. Place a thin layer of the spinach and mushroom mixture on the bottom of a baking dish.
- 24. Place the lasagna sheets on top of the sauce.
- 25. Repeat the layering process until all ingredients are used up.
- 26. Ensure that the lasagna sheets are completely covered with liquid.
- 27. Grate finely grated Parmesan cheese over the top layer of the lasagna.
- 28. Place the baking dish on the middle rack in the preheated oven.
- 29. Bake the lasagna for about 35 minutes.
- 30. Remove the lasagna from the oven.
- 31. Let the lasagna cool down for a short moment.
- 32. Cut the lasagna into individual portions.
- 33. Plate the lasagna on dishes.
- 34. Serve the dish and enjoy your meal.
