🍽️ Catalan-style Spinach with Ham and Raisins

Ingredients
- salt pinch
- raisins 40 g
- white wine, dry 50 ml
- leaf spinach 1 kg
- Serrano ham 200 g
- garlic cloves 2 pcs
- onions, yellow 1 pc
- olive oil 4 tbsp
- pine nuts 40 g
- pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 3 liters of water and add salt. Bring the water to a boil.
- 2. Place the raisins in a bowl and cover them with wine to soak.
- 3. Thoroughly wash the spinach leaves under running water.
- 4. Remove the tough stems from the spinach.
- 5. Add the prepared spinach to the boiling salted water.
- 6. Cook the spinach for about 3 minutes (this is called blanching, i.e., brief cooking in boiling water).
- 7. Pour the spinach into a colander to drain the water.
- 8. Rinse the spinach briefly with cold water to stop the cooking process.
- 9. Let the spinach drain well.
- 10. Squeeze the spinach lightly with your hands to remove excess moisture.
- 11. Tear the serrano ham into small, bite-sized pieces.
- 12. Peel the garlic.
- 13. Finely chop the garlic.
- 14. Halve the onion and peel it.
- 15. Cut the onion into small cubes.
- 16. Heat olive oil in a pan over medium heat.
- 17. Add the onion cubes and chopped garlic to the pan.
- 18. Sauté the vegetables for about 1 minute until they become translucent and soft.
- 19. Add the serrano ham pieces to the pan.
- 20. Fry the ham for about 1 minute.
- 21. Add the pine nuts to the pan.
- 22. Add the soaked raisins along with the wine liquid to the pan.
- 23. Add the drained spinach to the pan.
- 24. Cover the pan.
- 25. Let the dish cook for about 5 to 8 minutes.
- 26. Stir the dish several times during the cooking time.
- 27. Season the spinach with salt and pepper to taste.
- 28. Plate the spinach.
