  1. 1. Thoroughly wash the fresh spinach and chives under running water.
  2. 2. Shake off any excess water so the vegetables are dry.
  3. 3. Cut the chives into very fine, small rings.
  4. 4. Heat some oil in a frying pan over medium heat.
  5. 5. Add about two-thirds of the spinach to the hot pan.
  6. 6. Season the spinach with a pinch of salt.
  7. 7. Let the spinach heat up briefly until it wilts and becomes soft.
  8. 8. Crack the eggs and pour them directly over the warm spinach.
  9. 9. Reduce the heat to low and let the eggs cook for about 6 minutes.
  10. 10. Sprinkle the finished sunny-side-up eggs with the remaining fresh spinach and the chive rings.
  11. 11. Finally, season the eggs with black pepper to taste.
  12. 12. Serve the dish warm along with fresh bread rolls.
