🍳 Sunny-side-up eggs with spinach

Ingredients
- spinach, leaf 30 g
- chives, fresh 5 g
- oil 2 tbsp
- salt pinch
- eggs 4 pcs
- pepper, black ground pinch
- rolls 4 pcs
Instructions
- 1. Thoroughly wash the fresh spinach and chives under running water.
- 2. Shake off any excess water so the vegetables are dry.
- 3. Cut the chives into very fine, small rings.
- 4. Heat some oil in a frying pan over medium heat.
- 5. Add about two-thirds of the spinach to the hot pan.
- 6. Season the spinach with a pinch of salt.
- 7. Let the spinach heat up briefly until it wilts and becomes soft.
- 8. Crack the eggs and pour them directly over the warm spinach.
- 9. Reduce the heat to low and let the eggs cook for about 6 minutes.
- 10. Sprinkle the finished sunny-side-up eggs with the remaining fresh spinach and the chive rings.
- 11. Finally, season the eggs with black pepper to taste.
- 12. Serve the dish warm along with fresh bread rolls.
