🍰 Egg Muffins

Ingredients
- apricots, fresh 10 pcs.
- chocolate, white 150 g
- butter 100 g
- buttermilk 200 ml
- eggs 1 pc.
- wheat flour, Type 405 300 g
- baking powder 1 tsp
- sugar 100 g
- vanilla sugar 1 tsp
- salt pinch
Instructions
- 1. Preheat the oven to 200 °C (top/bottom heat). Wash the apricots, halve them, and remove the pit. Set aside 12 halves and dice the remaining fruit. Roughly chop the white chocolate.
- 2. In a bowl, mix the soft butter, buttermilk, and egg. Add flour, baking powder, sugar, vanilla sugar, and salt, and mix everything well. Gently fold in the chocolate and the apricot cubes into the batter.
- 3. Line the muffin tin with paper liners and fill in the batter. Place one apricot half on top of each and bake the muffins in the oven for about 30-35 minutes. Enjoy your result! Tip: You can also use canned peaches instead of apricots.
