🍽️ Diced Potatoes with Creamy Spinach and Fried Eggs

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- spinach leaves 800 g
- onions, yellow 1 pc.
- butter 2 tbsp
- white wine, dry 50 ml
- whipping cream 200 ml
- pepper, black ground pinch
- nutmeg, ground pinch
- rapeseed oil 2 tbsp
- eggs 4 pc.
Instructions
- 1. Thoroughly wash the potatoes under running water.
- 2. Peel the potatoes completely.
- 3. Cut the potatoes into small, uniform cubes.
- 4. Fill a pot with water and add some salt.
- 5. Bring the salted water to a boil.
- 6. Add the potato cubes to the boiling water.
- 7. Cook the potatoes over medium heat for about 20 minutes.
- 8. Drain the cooking water and let the potatoes drain well in a sieve.
- 9. Thoroughly wash the spinach under running water.
- 10. Let the washed spinach drain well.
- 11. Cut the onion in half.
- 12. Peel the onion halves.
- 13. Dice the onion into very small cubes.
- 14. Put the butter into a pot.
- 15. Melt the butter over high heat.
- 16. Add the onion cubes to the melted butter.
- 17. Fry the onions for about 2 minutes.
- 18. Add the drained spinach to the pot.
- 19. Cook the spinach for approx. 1 minute until it has wilted.
- 20. Deglaze the spinach with white wine.
- 21. Pour the cream into the pot.
- 22. Simmer the mixture over medium heat for about 3 minutes.
- 23. Season the spinach with salt, pepper, and grated nutmeg.
- 24. Puree the spinach finely until it has a creamy consistency.
- 25. Heat the oil in a frying pan over high heat.
- 26. Crack the eggs directly into the hot pan.
- 27. Fry the eggs for about 4 minutes.
- 28. Season the fried eggs with salt and pepper.
- 29. Place the drained potato cubes on the plates.
- 30. Add the creamy spinach.
- 31. Place the fried eggs on the dish.
