  2. 2. Peel the potatoes completely.
  3. 3. Cut the potatoes into small, uniform cubes.
  4. 4. Fill a pot with water and add some salt.
  5. 5. Bring the salted water to a boil.
  6. 6. Add the potato cubes to the boiling water.
  7. 7. Cook the potatoes over medium heat for about 20 minutes.
  8. 8. Drain the cooking water and let the potatoes drain well in a sieve.
  9. 9. Thoroughly wash the spinach under running water.
  10. 10. Let the washed spinach drain well.
  11. 11. Cut the onion in half.
  12. 12. Peel the onion halves.
  13. 13. Dice the onion into very small cubes.
  14. 14. Put the butter into a pot.
  15. 15. Melt the butter over high heat.
  16. 16. Add the onion cubes to the melted butter.
  17. 17. Fry the onions for about 2 minutes.
  18. 18. Add the drained spinach to the pot.
  19. 19. Cook the spinach for approx. 1 minute until it has wilted.
  20. 20. Deglaze the spinach with white wine.
  21. 21. Pour the cream into the pot.
  22. 22. Simmer the mixture over medium heat for about 3 minutes.
  23. 23. Season the spinach with salt, pepper, and grated nutmeg.
  24. 24. Puree the spinach finely until it has a creamy consistency.
  25. 25. Heat the oil in a frying pan over high heat.
  26. 26. Crack the eggs directly into the hot pan.
  27. 27. Fry the eggs for about 4 minutes.
  28. 28. Season the fried eggs with salt and pepper.
  29. 29. Place the drained potato cubes on the plates.
  30. 30. Add the creamy spinach.
