🍰 Speculoos Marble Cake with Egg Liqueur

Ingredients
- oil 2 tbsp
- breadcrumbs 2 tbsp
- speculoos cookies 100 g
- butter 200 g
- sugar 200 g
- eggs 4 pcs
- wheat flour, Type 405 250 g
- powdered sugar 100 g
- baking powder 2 tsp
- milk 50 ml
- egg liqueur 150 ml
- cocoa powder 2 tsp
Instructions
- 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 2. Grease a cake pan, preferably a bundt pan, generously with oil.
- 3. Dust the greased pan with breadcrumbs so the cake does not stick later.
- 4. Place the speculoos cookies in a freezer bag.
- 5. Crush the cookies with a pot until they are finely crumbly.
- 6. Beat the soft butter in a bowl for about one minute until foamy.
- 7. Add the sugar and eggs to the butter one by one.
- 8. Process the mixture with a hand mixer for about four minutes until creamy.
- 9. Gently fold in the flour, baking powder, and speculoos crumbs into the butter mixture.
- 10. Add the milk and 100 milliliters of egg liqueur.
- 11. Stir everything gently until you have a thick and uniform batter.
- 12. Divide the batter into two equal halves and place them in two separate bowls.
- 13. Stir cocoa powder into one of the halves until the mixture is uniformly dark.
- 14. Fill half of the light batter into the prepared cake pan.
- 15. Distribute the dark batter evenly over the light layer.
- 16. Place the remaining light batter on top of the cake.
- 17. Bake the cake in the oven for about 45 to 50 minutes.
- 18. Whisk powdered sugar with three to four tablespoons of egg liqueur into a thick glaze.
- 19. Let the cake cool briefly before removing it from the pan.
- 20. Pour the glaze over the cooled cake.
- 21. Enjoy the cake warm or cold.
