🍰 Speculoos Cheesecake with Glaze

Ingredients
- butter 100 g
- speculoos 280 g
- cream cheese, plain 250 g
- quark 40 % fat in trace 250 g
- powdered sugar 80 g
- vanilla extract 1 tsp
- orange paste 1 tsp
- whipping cream 400 g
- San-apart 9 tsp
- children's punch 250 g
- cake glaze, red 12 g
Instructions
- 1. Place a sheet of baking paper on a cake board.
- 2. Place a 25 cm diameter cake ring on the prepared paper.
- 3. Melt the butter in a pot or in the microwave.
- 4. Crush 250 g of speculoos cookies into fine crumbs.
- 5. Mix the cookie crumbs with the melted butter.
- 6. Fill the butter-crumb mixture into the cake ring.
- 7. Press the mixture firmly flat using your hands or a glass.
- 8. Place the base in the refrigerator for 30 minutes.
- 9. Stir cream cheese, quark, powdered sugar, vanilla extract, and orange paste in a bowl.
- 10. Pour in the cream and stir it in.
- 11. Whip the cream firm using San-apart.
- 12. Fill the cream onto the chilled cookie base.
- 13. Smooth the surface of the cream.
- 14. Place the cake in the refrigerator for 2 hours.
- 15. Stir the cake glaze powder into the children's punch.
- 16. Bring the mixture to a boil.
- 17. Pour the hot glaze quickly onto the cold cheesecake layer.
- 18. Smooth the glaze evenly immediately.
- 19. Place the cake back in the refrigerator for 30 minutes.
- 20. Place the cake on a cake plate.
- 21. Carefully remove the cake ring.
- 22. Crumble 30 g of speculoos cookies over the cake.
