🍽️ Creamy Asparagus Flans with Shrimp

Ingredients
- white asparagus 250 g
- green asparagus 250 g
- whipping cream 50 g
- cream cheese, plain 100 g
- eggs 2 pcs
- mozzarella 1 pcs
- party shrimp 200 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Fill a pot with water and bring it to a boil.
- 2. Thoroughly wash the asparagus.
- 3. Peel the white asparagus completely.
- 4. Peel the green asparagus only in the lower third.
- 5. Snap off the woody ends of the asparagus.
- 6. Cut the asparagus into bite-sized pieces.
- 7. Boil the white asparagus in the salted water for about 15 minutes until tender.
- 8. Add the green asparagus to the pot for the last 6 to 8 minutes of cooking.
- 9. Remove the asparagus from the water and let it cool down.
- 10. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 11. Cut off the asparagus tips and set them aside.
- 12. Puree the remaining asparagus in a tall container.
- 13. Add cream and cream cheese to the asparagus mixture and blend until smooth.
- 14. Stir the eggs into the mixture.
- 15. Season the mixture with salt and pepper.
- 16. Grate the mozzarella coarsely.
- 17. Mix the grated mozzarella with the shrimp.
- 18. Fold the shrimp and mozzarella mixture into the asparagus base.
- 19. Grease 8 small ovenproof ramekins with a little fat.
- 20. Fill the ramekins about two-thirds full with the flan mixture.
- 21. Arrange the reserved asparagus tips on top of the flans.
- 22. Place the ramekins into a larger baking dish.
- 23. Fill the baking dish with water until it reaches about 2 cm in height (water bath).
- 24. Bake the flans in the oven for approximately 35 to 40 minutes.
- 25. Serve the flans hot or cold.
