  1. 1. Fill a pot with water and bring it to a boil.
  2. 2. Thoroughly wash the asparagus.
  3. 3. Peel the white asparagus completely.
  4. 4. Peel the green asparagus only in the lower third.
  5. 5. Snap off the woody ends of the asparagus.
  6. 6. Cut the asparagus into bite-sized pieces.
  7. 7. Boil the white asparagus in the salted water for about 15 minutes until tender.
  8. 8. Add the green asparagus to the pot for the last 6 to 8 minutes of cooking.
  9. 9. Remove the asparagus from the water and let it cool down.
  10. 10. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  11. 11. Cut off the asparagus tips and set them aside.
  12. 12. Puree the remaining asparagus in a tall container.
  13. 13. Add cream and cream cheese to the asparagus mixture and blend until smooth.
  14. 14. Stir the eggs into the mixture.
  15. 15. Season the mixture with salt and pepper.
  16. 16. Grate the mozzarella coarsely.
  17. 17. Mix the grated mozzarella with the shrimp.
  18. 18. Fold the shrimp and mozzarella mixture into the asparagus base.
  19. 19. Grease 8 small ovenproof ramekins with a little fat.
  20. 20. Fill the ramekins about two-thirds full with the flan mixture.
  21. 21. Arrange the reserved asparagus tips on top of the flans.
  22. 22. Place the ramekins into a larger baking dish.
  23. 23. Fill the baking dish with water until it reaches about 2 cm in height (water bath).
  24. 24. Bake the flans in the oven for approximately 35 to 40 minutes.
  25. 25. Serve the flans hot or cold.
