  1. 1. Peel the asparagus and cut off the woody ends.
  2. 2. Cut the asparagus stalks diagonally into pieces about 1 cm thick.
  3. 3. Wash the spring onions thoroughly and dry them.
  4. 4. Cut off the roots of the spring onions and slice them into rings.
  5. 5. Rinse the lemon under hot water.
  6. 6. Finely grate about 1 teaspoon of the lemon zest.
  7. 7. Melt the butter in a pan over medium heat.
  8. 8. Fry the asparagus together with the spring onions for about 4 to 5 minutes.
  9. 9. Season the vegetables with salt, pepper, and the lemon zest.
  10. 10. Wash the basil and dry it.
  11. 11. Pluck the basil leaves from the stems.
  12. 12. Finely chop the basil leaves.
  13. 13. Whisk the basil, eggs, and cream together well in a bowl.
  14. 14. Season the egg mixture with salt and pepper.
  15. 15. Pour the egg mixture over the vegetables in the pan.
  16. 16. Let the tortilla set for about 3 to 4 minutes on each side.
  17. 17. Tear the ham into small pieces.
  18. 18. Distribute the ham on top of the asparagus tortilla.
