🍽️ Asparagus Tortilla

Ingredients
- white asparagus 1 bunch
- spring onions 1 bunch
- lemons 1 pc.
- butter 2 tbsp
- salt pinch
- pepper, black ground pinch
- basil, fresh 20 g
- eggs 6 pc.
- heavy cream 100 ml
- Serrano ham 200 g
Instructions
- 1. Peel the asparagus and cut off the woody ends.
- 2. Cut the asparagus stalks diagonally into pieces about 1 cm thick.
- 3. Wash the spring onions thoroughly and dry them.
- 4. Cut off the roots of the spring onions and slice them into rings.
- 5. Rinse the lemon under hot water.
- 6. Finely grate about 1 teaspoon of the lemon zest.
- 7. Melt the butter in a pan over medium heat.
- 8. Fry the asparagus together with the spring onions for about 4 to 5 minutes.
- 9. Season the vegetables with salt, pepper, and the lemon zest.
- 10. Wash the basil and dry it.
- 11. Pluck the basil leaves from the stems.
- 12. Finely chop the basil leaves.
- 13. Whisk the basil, eggs, and cream together well in a bowl.
- 14. Season the egg mixture with salt and pepper.
- 15. Pour the egg mixture over the vegetables in the pan.
- 16. Let the tortilla set for about 3 to 4 minutes on each side.
- 17. Tear the ham into small pieces.
- 18. Distribute the ham on top of the asparagus tortilla.
- 19. Serve the tortilla and enjoy your meal!
