🍽️ Asparagus with Ham, Honey Potatoes and Basil Sauce

Ingredients
- Cooking ham 300 g
- small potatoes, mostly waxy 1 kg
- Salt pinch
- Basil, fresh 20 g
- Lemons 1 pc
- green asparagus 2 bunch
- Pepper, black ground pinch
- Butter 2 tbsp
- Wheat flour, Type 405 2 tbsp
- Milk 400 ml
- Honey 1 tbsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan.
- 2. Take the ham out of the fridge to let it reach room temperature.
- 3. Wash the potatoes thoroughly.
- 4. Place the potatoes in a pot with salted water.
- 5. Bring the water to a boil.
- 6. Cook the potatoes for about 15 minutes over medium heat.
- 7. Wash the basil.
- 8. Shake the basil dry thoroughly.
- 9. Pluck the basil leaves from the stems.
- 10. Set the leaves aside.
- 11. Discard the basil stems.
- 12. Cut a lemon in half.
- 13. Squeeze the juice from the lemon.
- 14. Wash the asparagus.
- 15. Remove the woody ends from the asparagus.
- 16. Place the asparagus in a baking dish.
- 17. Pour 100 milliliters of salted water over the asparagus.
- 18. Add the basil stems to the baking dish.
- 19. Add the lemon juice to the baking dish.
- 20. Add a pinch of pepper to the baking dish.
- 21. Cover the baking dish with aluminum foil.
- 22. Cook the asparagus in the oven for about 20 minutes.
- 23. Melt butter in a pot over medium heat.
- 24. Stir flour into the melted butter.
- 25. Mix the butter and flour well.
- 26. Add the milk slowly.
- 27. Simmer the sauce for about 10 minutes over low heat.
- 28. Add the chopped basil at the end.
- 29. Season the sauce with salt and pepper.
- 30. Drain the potatoes.
- 31. Let the potatoes steam in the hot pot for about 1 minute.
- 32. Add the honey to the potatoes.
- 33. Toss the potatoes briefly to distribute the honey.
- 34. Tear the ham into coarse pieces.
- 35. Take the asparagus out of the oven.
- 36. Plate the asparagus.
- 37. Add the honey potatoes to the asparagus.
- 38. Add the ham pieces to the asparagus.
- 39. Pour the basil sauce over the dish.
- 40. Enjoy the asparagus with ham, honey potatoes and basil sauce.
