🍽️ Asparagus with Ham-Egg Dip

Ingredients
- Salt pinch
- white asparagus 2 bunches
- eggs 4 pcs.
- spring onions 1 bunch
- capers 2 tbsp
- oil 1 tbsp
- ham cubes 125 g
- pepper, black ground pinch
Instructions
- 1. Bring about 2 liters of salted water to a boil in a large pot. Peel the asparagus, remove the woody ends, and cook in the boiling salted water for about 10 minutes. Then drain into a colander and rinse with cold water.
- 2. In the meantime, bring about 1 liter of water to a boil in another pot and hard-boil the eggs in it for approx. 10 minutes. Then drain, shock with cold water, and remove the shell.
- 3. Chop the eggs finely. Wash the spring onions, dry them well, remove the root ends, and cut into fine rings. Also chop the capers finely.
- 4. Heat oil in a pan over high heat and sauté the spring onions in it for approx. 2 minutes. Then add the ham cubes and stir briefly. Remove the pan from the heat, add the eggs, capers, and 1 tbsp caper liquid, and season everything with salt and pepper.
- 5. Serve the white asparagus together with the ham and egg dip. Enjoy your meal!
