  1. 1. Bring about 2 liters of salted water to a boil in a large pot. Peel the asparagus, remove the woody ends, and cook in the boiling salted water for about 10 minutes. Then drain into a colander and rinse with cold water.
  2. 2. In the meantime, bring about 1 liter of water to a boil in another pot and hard-boil the eggs in it for approx. 10 minutes. Then drain, shock with cold water, and remove the shell.
  3. 3. Chop the eggs finely. Wash the spring onions, dry them well, remove the root ends, and cut into fine rings. Also chop the capers finely.
  4. 4. Heat oil in a pan over high heat and sauté the spring onions in it for approx. 2 minutes. Then add the ham cubes and stir briefly. Remove the pan from the heat, add the eggs, capers, and 1 tbsp caper liquid, and season everything with salt and pepper.
  5. 5. Serve the white asparagus together with the ham and egg dip. Enjoy your meal!
