  1. 1. Fill a heatproof baking dish with about two centimeters of water.
  2. 2. Place the water-filled dish into the oven.
  3. 3. Preheat the oven to 150 degrees Celsius with top and bottom heat.
  4. 4. Put 100 grams of sugar and some water into a saucepan.
  5. 5. Cover the saucepan with a lid.
  6. 6. Bring the sugar-water mixture to a boil.
  7. 7. Let the mixture simmer until the water has evaporated.
  8. 8. Watch for the formation of sugar syrup and then caramel.
  9. 9. Do not stir while cooking.
  10. 10. Pour the hot caramel directly from the saucepan into the individual molds.
  11. 11. Cover the bottom of the molds completely with the caramel.
  12. 12. Whisk the eggs, 80 grams of sugar, and vanilla extract briefly.
  13. 13. Ensure that the ingredients have combined.
  14. 14. Warm the milk in the same pot you used to make the caramel.
  15. 15. Do not let the milk boil.
  16. 16. Remove the milk from the heat.
  17. 17. Pour the warm milk slowly into the egg-sugar mixture.
  18. 18. Whisk everything until no lumps remain.
  19. 19. Pour the cream into the molds on top of the caramel.
  20. 20. Place the molds into the hot water in the oven.
  21. 21. Bake the flan at 150 degrees Celsius with top and bottom heat.
  22. 22. Bake until the mixture is set.
  23. 23. Carefully loosen the flan from the edge of the mold with a knife.
  24. 24. Invert the flan onto a plate.
  25. 25. Serve the dessert.
