  1. 1. Thoroughly wash the spinach and dry it well. Cut the spinach into fine strips. Halve the onions and remove the skin. Dice the onions into small cubes. Wash the parsley and dry it. Remove the thick stems. Finely chop the parsley.
  2. 2. Warm 2 tablespoons of butter in a pot over medium heat. Toast the pine nuts and raisins for about 2 minutes. Remove the mixture from the pot and place it on a small plate. Do not clean the pot.
  3. 3. Bring about 3 liters of water with salt to a boil in another pot. Wash the tomatoes and remove the stems. Cut the tomatoes into pieces about 1 centimeter in size. Mix 4 tablespoons of oil, vinegar, sugar, and water in a bowl. Season the mixture with salt and pepper. Fold in the tomato pieces and the parsley.
  4. 4. Heat 3 tablespoons of oil in the uncleaned pot over medium heat. Fry the onion cubes for about 2 minutes. Add the chopped spinach. Let the spinach wilt. Stir in the crème fraîche. Mix everything well. Let the mixture simmer under a lid over low heat for about 5 minutes. Stir occasionally.
  5. 5. Cook the spaghetti in the boiling salted water for about 10 minutes until al dente. Take some cooking water into a cup. Drain the pasta in a sieve. Add the spaghetti to the spinach. Season with salt and pepper. Stir in some of the cooking water if needed to make the sauce creamier.
  6. 6. Plate the spaghetti with the creamy spinach. Sprinkle the toasted pine nuts and raisins on top. Grate Parmesan over the dish. Serve the salad separately. Enjoy your meal!
