Instructions

  1. 1. Cut the onion in half and remove the outer skin. Dice the onion piece into small cubes.
  2. 2. Peel the garlic clove and chop it very finely.
  3. 3. Wash the basil thoroughly under running water. Shake it dry to remove excess water.
  4. 4. Pluck the basil leaves off the tough stems.
  5. 5. Chop the basil leaves roughly.
  6. 6. Fill a pot with about 5 liters of water and add salt. Bring the water to a boil.
  7. 7. Take a second pot and add the oil. Heat the oil over high heat.
  8. 8. Add the diced onions and chopped garlic to the hot oil. Sauté the mixture for about 2 minutes.
  9. 9. Stir the tomato paste into the onion-garlic mixture. Cook it for another 2 minutes.
  10. 10. Season the sauce with salt, pepper, a pinch of sugar, and herbs de Provence.
  11. 11. Add the chopped tomatoes to the pot and stir everything well.
  12. 12. Let the sauce simmer over medium heat for about 10 minutes.
  13. 13. Add the spaghetti to the boiling salted water. Cook them for about 9 minutes until al dente (firm to the bite).
  14. 14. Drain the spaghetti and let them drain well.
  15. 15. Portion the spaghetti onto plates and pour the warm tomato sauce over them.
  16. 16. Sprinkle the dish with the chopped basil and grated Parmesan.
