🍝 Spaghetti with Spinach, Roasted Garlic and Walnut-Carrot Topping

Ingredients
- Carrots 6 pcs
- Chili, ground pinch
- Sugar 1.5 tbsp
- Olive oil 4 tbsp
- Walnut kernels 50 g
- Leaf spinach 400 g
- Garlic cloves 3 pcs
- Salt 1 tbsp
- Butter 1 tbsp
- Spaghetti 500 g
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Peel the carrots and cut off the ends.
- 3. Cut the carrots diagonally into pieces about 2 cm wide.
- 4. Place the carrot pieces in a bowl.
- 5. Add chili, 1 tablespoon of sugar, and 1 tablespoon of olive oil.
- 6. Mix the ingredients well together.
- 7. Spread the carrot mixture onto a baking sheet.
- 8. Place the tray in the oven for approx. 20 to 25 minutes.
- 9. Take the walnuts and put them in the same bowl.
- 10. Add 1 tablespoon of olive oil and 1 teaspoon of sugar.
- 11. Mix the walnuts with the ingredients.
- 12. Take the baking sheet out of the oven after 15 minutes.
- 13. Add the walnuts to the tray with the carrots.
- 14. Continue baking everything for the remaining time.
- 15. Wash the spinach thoroughly.
- 16. Spin the spinach dry.
- 17. Peel the garlic.
- 18. Slice the garlic into thin slices.
- 19. Fill approx. 5 liters of water into a pot.
- 20. Salt the water and bring it to a boil.
- 21. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a pan.
- 22. Set the heat to medium.
- 23. Add the garlic slices to the pan.
- 24. Fry the garlic for approx. 6 to 8 minutes.
- 25. Fry until it is golden brown.
- 26. Add the spaghetti to the boiling salted water.
- 27. Cook the spaghetti for approx. 4 minutes.
- 28. Cook until they are al dente (firm to the bite).
- 29. Drain the spaghetti.
- 30. Add the spaghetti to the garlic in the pan.
- 31. Add the spinach.
- 32. Fry everything together for 2 to 3 minutes.
- 33. Season the spaghetti with salt and pepper.
- 34. Remove the spaghetti from the heat.
- 35. Serve the spaghetti on deep plates.
- 36. Garnish the spaghetti with the baked carrots.
- 37. Garnish the spaghetti with the walnuts.
