🍝 Crunchy Spaghetti with Lemon, Garlic, and Anchovies

Ingredients
- Organic lemons 1 pcs
- Parsley, fresh 20 g
- Garlic cloves 2 pcs
- Parmesan 30 g
- Salt Pinch
- Spaghetti 500 g
- Olive oil 4 tbsp
- Breadcrumbs 20 g
- Anchovy fillets in olive oil 40 g
- Pepper, black ground Pinch
- Butter 20 g
Instructions
- 1. Wash the lemon thoroughly under running water.
- 2. Grate about one teaspoon of the yellow lemon zest.
- 3. Cut the lemon in half.
- 4. Squeeze the juice from the lemon halves.
- 5. Rinse the parsley under cold water.
- 6. Shake the parsley dry.
- 7. Remove the thick stems from the parsley.
- 8. Finely chop the parsley leaves.
- 9. Peel the garlic clove.
- 10. Slice the garlic into very thin slices.
- 11. Grate the Parmesan finely.
- 12. Fill about five liters of water into a large pot.
- 13. Add salt to the water.
- 14. Bring the salted water to a boil.
- 15. Add the spaghetti to the boiling water.
- 16. Set the stove to medium heat.
- 17. Cook the spaghetti for about nine minutes.
- 18. Cook the pasta al dente (firm to the bite).
- 19. Place a colander over a large bowl.
- 20. Drain the spaghetti into the colander.
- 21. Reserve about one cup of the pasta water.
- 22. Heat two tablespoons of olive oil in a pan.
- 23. Set the heat to medium.
- 24. Add the breadcrumbs to the hot pan.
- 25. Toast the breadcrumbs for about three minutes.
- 26. Fry the breadcrumbs until golden brown.
- 27. Remove the pan from the heat.
- 28. Transfer the toasted breadcrumbs into a bowl.
- 29. Mix the breadcrumbs with the lemon zest.
- 30. Lightly salt the mixture.
- 31. Set the bowl with the breadcrumbs aside.
- 32. Continue using the same pan.
- 33. Add two tablespoons of olive oil to the pan.
- 34. Set the heat to medium.
- 35. Add the garlic to the pan.
- 36. Sauté the garlic for about two minutes.
- 37. Fry the garlic until golden brown.
- 38. Add the anchovies to the pan.
- 39. Add the lemon juice to the pan.
- 40. Toss the pan briefly to mix everything.
- 41. Remove the pan from the heat.
- 42. Add the still damp spaghetti to the pan.
- 43. Add butter to the pan.
- 44. Add the chopped parsley to the pan.
- 45. Add the grated Parmesan to the pan.
- 46. Mix all ingredients well together.
- 47. Add some of the reserved pasta water.
- 48. Stir in the water to loosen the sauce.
- 49. Season the spaghetti with pepper.
- 50. Season the spaghetti with salt.
- 51. Plate the spaghetti on dishes.
- 52. Sprinkle the spaghetti with the lemon breadcrumbs.
