🍝 Spaghetti with Smoked Salmon and Lemon Crème Fraîche

Ingredients
- Salt Pinch
- Lemons 1 pc.
- Leek 2 pcs.
- Butter 3 tbsp
- Pepper, black ground Pinch
- Spaghetti 500 g
- Chives, fresh 20 g
- Crème fraîche 200 g
- Smoked salmon 200 g
Instructions
- 1. Fill a large pot with water and add a pinch of salt. Bring the water to a boil.
- 2. Rinse the lemon thoroughly under running water. Cut it in half and squeeze out the juice.
- 3. Cut the leek lengthwise. Wash it thoroughly and slice it into thin, diagonal strips.
- 4. Heat butter in a pan. Sauté the leek for about 5 minutes until it is soft and translucent.
- 5. Season the leek with salt and pepper to taste.
- 6. Add the spaghetti to the boiling salted water. Cook for approx. 8 minutes until al dente.
- 7. Reserve a small amount of the pasta cooking water before draining the spaghetti in a sieve.
- 8. Wash the chives and slice them into fine rings.
- 9. In a bowl, mix the crème fraîche, chives, 1 tablespoon of lemon juice, and 2 tablespoons of the reserved pasta water.
- 10. Season the sauce with salt and pepper to taste.
- 11. Tear the smoked salmon into coarse pieces.
- 12. Toss the spaghetti with the lemon crème fraîche sauce, the sautéed leek, and the smoked salmon.
- 13. Add a little more lemon juice, salt, and pepper to finalize the flavor.
- 14. Plate the pasta and serve immediately.
