  1. 1. Wash the lemon under hot water, finely grate about 1 tsp of zest, cut it in half and squeeze out the juice. Trim the root end of the leek, cut it lengthwise, slice it diagonally and rinse it well in a sieve. Halve the onion, peel it, and dice it finely.
  2. 2. Bring about 5 liters of salted water to a boil in a large pot. Cook the spaghetti in the bubbling salted water for about 9 minutes until al dente. Drain in a sieve, reserving about 1 cup of the cooking water.
  3. 3. Heat 2 tablespoons of oil in a pan over medium heat and sauté the diced onion for about 2 minutes until translucent. Add the leek and fry for about 4 minutes without browning.
  4. 4. In a bowl, mix the sour cream with the lemon zest, 1 tablespoon of lemon juice, and 2 tablespoons of the cooking water. Season generously with salt and pepper.
  5. 5. Add the sour cream to the leek and stir gently over low heat for about 1 minute. The sauce should not boil at this point. Fold in the spaghetti and smoked salmon. If necessary, add a bit of the reserved cooking water to loosen the sauce.
  6. 6. Taste the spaghetti with smoked salmon in lemon cream sauce, adjusting with some of the remaining lemon juice, salt, and pepper. Serve on deep plates. Enjoy your meal!
