🍝 Crispy Spaghetti with Garlic-Pepper Oil and Parmesan

Ingredients
- Salt pinch
- Garlic cloves 2 pcs.
- Pepper, red 2 pcs.
- Parsley, fresh 20 g
- Lemons 1 pcs.
- Spaghetti 500 g
- Olive oil 6 tbsp
- Pepper, black ground pinch
- Parmesan, grated 40 g
Instructions
- 1. Fill a large pot with about 5 liters of water and add plenty of salt. Bring the water to a boil.
- 2. Peel the garlic and slice it thinly.
- 3. Wash the pepper thoroughly. Cut it in half, remove the stem and seeds. Chop the pepper flesh into small pieces.
- 4. Wash the parsley and pat it dry. Pluck the leaves from the stems and chop them finely.
- 5. Wash the lemon. Grate about 1 teaspoon of the zest.
- 6. Cut the lemon in half and squeeze out the juice.
- 7. Add the spaghetti to the boiling salted water and cook for about 10 minutes.
- 8. Heat the oil in a pan over medium heat.
- 9. Fry the garlic together with the pepper for about 2 minutes.
- 10. Season the mixture with salt and pepper.
- 11. Drain the spaghetti in a colander. Catch about 1 cup of the cooking water.
- 12. Return the spaghetti to the pot.
- 13. Mix the pasta with the garlic-pepper oil, the lemon zest, 2 teaspoons of lemon juice, and the parsley.
- 14. If necessary, add some of the saved pasta cooking water to make the sauce creamier.
- 15. Season the spaghetti to taste with salt and pepper.
- 16. Serve the spaghetti with the pepper-garlic oil on plates.
- 17. Sprinkle the dishes with Parmesan. Enjoy your meal!
