🍝 Creamy Spaghetti with Salmon and Radicchio

Ingredients
- Salt pinch
- Smoked salmon 200 g
- Onions, yellow 2 pcs
- Radicchio 350 g
- Oil 2 tbsp
- Sugar pinch
- Vegetable broth 200 ml
- Whipping cream 200 g
- Pepper, black ground pinch
- Spaghetti 500 g
- Oranges 1 pc
Instructions
- 1. Bring about 5 liters of water with salt to a boil in a large pot.
- 2. Take the salmon out of the fridge and let it warm up to room temperature.
- 3. Halve the onion, peel it, and cut it into small cubes.
- 4. Cut the radicchio into strips about 2 cm wide.
- 5. Wash the radicchio strips thoroughly and dry them in a salad spinner.
- 6. Heat some oil in a separate pot over medium heat.
- 7. Sauté the onion cubes with a pinch of sugar for 2 to 3 minutes until they are colorless.
- 8. Pour the broth and cream into the pot.
- 9. Season the sauce with salt and pepper.
- 10. Bring the sauce to a boil.
- 11. Let the sauce simmer for 10 to 12 minutes over medium heat until it thickens.
- 12. Cook the spaghetti in the boiling salted water for 9 to 11 minutes until al dente.
- 13. Wash the orange and halve it.
- 14. Squeeze the juice out of the orange.
- 15. Add the orange juice and the radicchio to the sauce.
- 16. Let everything simmer together in the sauce for about 1 minute.
- 17. Finally, adjust the seasoning of the sauce with salt, pepper, and sugar.
- 18. Drain the pasta and let it drain well.
- 19. Plate the spaghetti with the salmon cream radicchio sauce.
- 20. Serve the dish immediately and enjoy.
