  1. 1. Bring about 5 liters of water with salt to a boil in a large pot.
  2. 2. Take the salmon out of the fridge and let it warm up to room temperature.
  3. 3. Halve the onion, peel it, and cut it into small cubes.
  4. 4. Cut the radicchio into strips about 2 cm wide.
  5. 5. Wash the radicchio strips thoroughly and dry them in a salad spinner.
  6. 6. Heat some oil in a separate pot over medium heat.
  7. 7. Sauté the onion cubes with a pinch of sugar for 2 to 3 minutes until they are colorless.
  8. 8. Pour the broth and cream into the pot.
  9. 9. Season the sauce with salt and pepper.
  10. 10. Bring the sauce to a boil.
  11. 11. Let the sauce simmer for 10 to 12 minutes over medium heat until it thickens.
  12. 12. Cook the spaghetti in the boiling salted water for 9 to 11 minutes until al dente.
  13. 13. Wash the orange and halve it.
  14. 14. Squeeze the juice out of the orange.
  15. 15. Add the orange juice and the radicchio to the sauce.
  16. 16. Let everything simmer together in the sauce for about 1 minute.
  17. 17. Finally, adjust the seasoning of the sauce with salt, pepper, and sugar.
  18. 18. Drain the pasta and let it drain well.
  19. 19. Plate the spaghetti with the salmon cream radicchio sauce.
  20. 20. Serve the dish immediately and enjoy.
