🍝 Creamy Spaghetti with Mushrooms, Peas, and Fresh Basil

Ingredients
- Salt Pinch
- Onions, yellow 2 pcs.
- Mushrooms, white 500 g
- Olive oil 5 tbsp
- Spaghetti 500 g
- Cream cheese, plain 300 g
- Pepper, black ground Pinch
- Peas from the can 300 g
- Basil, fresh 50 g
Instructions
- 1. Fill a large pot with about 4 liters of water and add salt. Cover the pot and bring the water to a boil.
- 2. Halve the onions and peel them. Cut the onions into small cubes.
- 3. Clean the mushrooms with a kitchen towel if necessary. Slice the mushrooms thinly.
- 4. Heat 3 tablespoons of olive oil in a frying pan over high heat.
- 5. Fry the mushrooms in the hot pan for about 4 to 5 minutes.
- 6. Add 1 tablespoon of olive oil and the diced onions to the pan.
- 7. Sauté the onions for about 3 to 4 minutes.
- 8. Add the spaghetti to the boiling salted water.
- 9. Cook the spaghetti for about 9 to 11 minutes until al dente (firm to the bite).
- 10. Drain the pasta in a colander.
- 11. Do not rinse the pasta with water.
- 12. Toss the drained spaghetti with 1 tablespoon of olive oil.
- 13. Set the spaghetti aside.
- 14. Take 3 to 4 tablespoons of the pasta cooking water and put it in a bowl.
- 15. Add cream cheese, salt, and pepper to the bowl with the cooking water.
- 16. Whisk the mixture in the bowl well with a whisk.
- 17. Drain the peas in a sieve.
- 18. Add the cream cheese mixture and the drained peas to the pan with the onions.
- 19. Warm the sauce in the pan over medium heat for about 2 minutes.
- 20. Make sure the sauce does not boil so that the cream cheese does not curdle.
- 21. Wash the basil thoroughly.
- 22. Dry the basil.
- 23. Pluck the basil leaves from the stems.
- 24. Finely chop or tear the basil leaves.
- 25. Add the sauce and half of the basil leaves to the spaghetti in a bowl or pot.
- 26. Mix everything well together.
- 27. Season the spaghetti with salt and pepper to taste.
- 28. Serve the spaghetti with the sauce on deep plates.
- 29. Sprinkle the finished dishes with the remaining basil.
