🍝 Spaghetti with creamy avocado lemon sauce

Ingredients
- Salt pinch
- Spaghetti 500 g
- Garlic cloves 1 pc.
- Onions, yellow 1 pc.
- Organic lemons 1 pc.
- Avocado 3 pc.
- Pine nuts 4 tbsp
- Oil 2 tbsp
- Basil, fresh 10 g
- Pepper, black ground pinch
Instructions
- 1. Bring five liters of water with salt to a boil in a large pot.
- 2. Add the spaghetti to the boiling water.
- 3. Cook the pasta for about nine minutes until al dente.
- 4. Reserve a small bowl of pasta cooking water.
- 5. Drain the spaghetti and let them drain well.
- 6. Peel the garlic cloves and chop them very finely.
- 7. Halve the onion, peel it, and cut it into coarse cubes.
- 8. Wash the lemon thoroughly.
- 9. Grate about one teaspoon of lemon zest finely.
- 10. Squeeze the juice of the lemon.
- 11. Halve the avocados and remove the pits.
- 12. Carefully scoop the avocado flesh out of the skin with a spoon.
- 13. Wash the basil and shake it dry.
- 14. Pluck the basil leaves from the stems.
- 15. Finely chop the basil leaves.
- 16. Heat a frying pan over high heat.
- 17. Toast the pine nuts for about three minutes until golden yellow.
- 18. Remove the pine nuts from the pan and place them on a plate.
- 19. Add two tablespoons of oil to the same pan.
- 20. Heat the oil over medium heat.
- 21. Add the cubed onion and chopped garlic to the pan.
- 22. Sauté the vegetables for about three minutes until translucent but not brown.
- 23. Place the avocado, lemon juice, lemon zest, onion, and garlic into a tall container.
- 24. Blend the ingredients finely until a smooth sauce forms.
- 25. Add some of the reserved pasta water as needed to adjust the consistency.
- 26. Season the avocado sauce with salt and pepper to taste.
- 27. Toss the drained spaghetti directly in the pot with the avocado sauce.
- 28. Plate the spaghetti.
- 29. Garnish the dishes with the chopped basil and toasted pine nuts.
- 30. Serve the dish immediately and enjoy.
