  1. 1. Wash the basil thoroughly and shake off excess water. Pluck the leaves from the stems. Put the leaves into the mixing container and chop them for 5 seconds on the highest speed setting. Transfer the chopped basil into a small bowl and set aside.
  2. 2. Cut the onion in half and peel off the outer skin. Peel the garlic clove. Cut the smoked tofu into small cubes. Wash the lemon under hot water. Finely grate about one teaspoon of lemon zest and squeeze out the juice.
  3. 3. Put the onion and garlic into the mixing container and chop them for 4 seconds on the highest speed setting. Scrape down the sides with a spatula. Add the tofu and oil and fry the mixture for 3 minutes on the sauté setting. Add the flour and fry for another 2 minutes on the sauté setting. Add the vegetable broth, oat drink, salt, 3 tablespoons of lemon juice, and the lemon zest. Bring the sauce to a boil for 7 minutes at 100 degrees Celsius and speed level 2.
  4. 4. Bring about 5 liters of salted water to a boil in a large pot. Add the spaghetti to the boiling water and cook for about 9 minutes until al dente. Drain the pasta in a colander and let it drip dry for a moment.
  5. 5. Cut the avocados in half and remove the pit. Use a spoon to scoop the flesh out of the skin. Add the avocado pieces to the hot sauce and blend everything for 20 seconds on speed level 6. Season the sauce with salt and pepper to taste. Plate the spaghetti, top with the avocado lemon sauce, and sprinkle with the prepared basil. Enjoy your meal!
